4 tomatoes
4 apples, peeled, cored and sliced
1 pinch salt and freshly ground

   black pepper, to taste
oil or lard for the ovenproof dish
4 onions, sliced thinly
8 pork chops (each about 150g)
flour for dusting
6 tablespoons white wine

Preheat oven to 200 degrees C.

Cut crosses into the tomatoes, scald with hot water, peel and then cut into slices. Mix the apples and tomatoes in a bowl; add a small amount of sugar and salt.

Meanwhile, grease an ovenproof dish with lard and fry half the onions over medium high heat until translucent. Add half of the apple and tomato mixture.
Season the pork chops with salt and pepper, dip lightly in flour and place in the ovenproof dish. Cover with the rest of the apple and tomato mixture.
Drizzle with the white wine, cover and cook in the preheated oven for about 30 minutes.
